Can I use the z bilinear transform method on a circuit transfer function with an op-Amp? In general, can I apply this method starting not only from an analogue filter (as mentioned in chapter 11 of the fx audio book) but from a general circuit transfer function?

You can use the BZTransform to convert any H(s) into a corresponding H(z), so sure, you can use it for op-amp transfer functions in the s-domain.
